Most granita recipes instruct you to freeze the combined ingredients and then stir every thirty minutes or so to create a flaky texture. In our recipe, you freeze this no-sugar-added mixture until it is hard and then quickly pulse it in the Vitamix to create the finished dessert.
3 to 4 hours PROCESSING:pulsing YIELD:3 cups (720 ml)
- 2½ cups (600 ml) fresh pink grapefruit juice
- 4 teaspoons stevia blend
- 1 cup (240 ml) water
1. Combine the juice, stevia, and water in a bowl and whisk until the stevia has dissolved. Pour the
liquid into a baking pan and freeze until hard, 3 to 4 hours.
2. With a fork, break the granita into large chunks. Transfer the chunks to the Vitamix container and secure the lid. Select Variable 4. Use the On/Off switch to quickly pulse the mixture while using the tamper to press the ingredients into the blades. Continue pulsing until the mixture is smooth. Do notovermix or melting will occur.
3. Serve immediately.
